Hot Honey Ribs: Sticky, Spicy, Smoked Perfection

Hot Honey Ribs: Sticky, Spicy, Smoked Perfection

If you’ve ever wanted ribs so glossy, so tender, and so downright seductive that your neighbors “accidentally” wander over to your yard… welcome to your moment.

These Hot Honey Ribs hit every craving at once:

Sweet.
Spicy.
Smoky.
Sticky enough to make you rethink your relationship with wet wipes.

The magic?
A full-on rub-down with Rub Yer Meat and a hot honey glaze that makes these ribs shine like they’re headed to a red-carpet event.

Let’s get into it.

Ingredients

Ribs

  • 3 slabs St. Louis spare ribs
  • ¼ cup hot sauce (binder)
  • Rub Yer Meat (season generously)

Rib Wrap

  • 1 cup light brown sugar
  • ¼ cup hot honey
  • 3 sticks salted butter, split lengthwise

Hot Honey Glaze

  • 1 cup your favorite BBQ sauce
  • ¼ cup hot honey

Instructions

We’re keeping this simple with a 3–2–1-style rib flow:
Smoke → Wrap → Glaze

Step 1: Smoke (3 Hours)

  • Trim ribs and remove the membrane.
  • Rub a light coat of hot sauce on each slab as your binder.
  • Season aggressively with Rub Yer Meat.
  • Preheat your smoker to 250°F with hickory or your preferred wood.

Place ribs on the smoker meat side up and let the color develop for 3 hours.
Spritz lightly with water if the bark starts drying out.

Step 2: Wrap (2 Hours)

Mix your wrap ingredients:

  • Brown sugar
  • Hot honey

That’s your sweet-heat combo.

Lay out two sheets of foil per slab.
Add a layer of brown sugar + hot honey onto the foil, then lay the ribs meat side down right into that sugary sauna.

Place half a stick of butter across each slab, then wrap tightly.

Return wrapped ribs to the smoker for 2 hours, or until tender.

This is where they soften into that fall-apart stage everyone dreams about.

Step 3: Glaze (1 Hour)

Mix your glaze:

  • Your favorite BBQ sauce
  • Hot honey

Unwrap the ribs and place them on a rack.
Brush with glaze, sprinkle a little extra Rub Yer Meat, and return to the smoker for 15–20 minutes to set the glaze.

Serving

Slice into individual bones and serve warm.
Expect silence at the table… followed by groans of joy.
These ribs are everything.

Tips for Hot Honey Rib Success

  • Rub heavy. These ribs can take it.
  • Wrap tight. Steam = tenderness.
  • Let the glaze set. It’s worth the wait.

Final Thoughts

These Hot Honey Ribs are the perfect blend of sweet, spicy, smoky, and “I need a minute alone.”
Rub Yer Meat gives them the backbone, the wrap brings the tenderness, and the glaze delivers the final glossy knockout.
