Smoked Brie with Cranberry Sauce

🧀 Choose Your Brie Wheel (Either Size Works, Your Confidence Will Provide the Rest)
This recipe works beautifully with:
- A large 2.2 lb wheel (full holiday centerpiece energy),
or - A small 8 oz round (perfect for date night or intimate gatherings)
Same method, same ingredients — just slightly different bake times.
❄️ Step 1: Freeze the Brie (Yes, Really)
Before you do anything, place the brie wheel on a plate and freeze it for 30 minutes.
Why?
Because slightly firming it up makes it way easier to handle, cut, and cook. And it prevents catastrophic cheese explosions — which are fun at pizza restaurants but not at holiday parties.

🔪 Step 2: Lop Off the Top (It's Fine, Brie Is Forgiving)
Once your brie is firm, preheat your oven to 350°F (or your smoker to 225°F if you want bonus smoky flavor — more on that in a second).
Use a sharp knife to slice off the top rind. It doesn't have to be pretty. The cheese will smooth out and melt like a champ.
🌿 Step 3: Herb Bed = Flavor + Aroma + Fancy Points
Line a rimmed baking sheet with parchment.
Toss these on top:
- 6 sprigs rosemary
- 6 sprigs thyme
- 2 tablespoons olive oil
Mix them around until coated and spread into an herb bed.
Then place the brie right on top, covering about half the herbs.
This looks fancy. It smells amazing. And it makes your kitchen feel like a holiday movie without the forced romance subplot.

🔥 Step 4: Bake the Brie Until Melted and Glorious
For the oven method:
Bake at 350°F for 15–20 minutes, until the brie is molten and soft.
For the smoker method:
Smoke at 225°F for 25–35 minutes, until warmed through and spreadably delicious.
IMPORTANT:
Let the brie rest for 5 minutes before moving it.
If you skip this, you risk molten cheese everywhere — which is technically a blessing, but not helpful for presentation.

🌿✨ Step 5: Herb Sprinkle + Transfer
Strip the leaves from the uncovered herbs and sprinkle them over the top of the brie.
Then, using the parchment and a wide spatula, carefully slide the soft, warm brie onto a board.
If you hear your guests gasp, that’s normal.
🍒 Now for the Cranberry Sauce (Sweet, Tangy, and Powered by Rub Yer Meat)
This cranberry sauce is technically a mostarda…
But around here, we’re calling it cranberry sauce, because that’s what normal humans understand — and what looks best in a holiday recipe.
It’s sweet, fruity, slightly tangy, and loaded with flavor.

Ingredients:
- ½ cup dry white wine
- ½ cup sugar
- 1 Bosc pear, peeled + diced
- 12 oz fresh or thawed cranberries (divided)
- 1 tablespoon mustard seeds
- 1 teaspoon dry mustard
- 2 teaspoons Rub Yer Meat
Instructions:
1. Boil the wine + sugar.
Heat together for about 4 minutes, stirring until boiling.

2. Add pear + half the cranberries.
Cook 5–8 minutes until the berries burst and the pears soften.

3. Add the rest of the cranberries.
Bring back to a gentle boil.

4. Stir in mustard seeds, dry mustard, and Rub Yer Meat.
Remove from heat and let cool to room temp.
The flavor deepens as it sits — it’s even better the next day.

You can make this 5 days ahead and store chilled.
Bring to room temperature before serving.
